Banana Oatmeal Bread

 Lynn A. and I were talking oatmeal cookies this morning and we were both craving them. I didn't have the energy to do the cookies, but made this bread instead. I also had an overripe banana to use up so I threw that in there. The only thing missing was some walnuts, which I didn't have on hand.

This bread is moist and not overly sweet. The whole wheat flour makes it a little healthier as well.

1/2 cup butter, softened
3/4 cup sugar
2 eggs, beaten
1 t vanilla extract
1/2 cup flour
1/2 cup whole wheat flour
1 cup quick cook oats
1 t baking soda
1/2 t each: salt and cinnamon
1-2 mashed bananas
1/4 cup buttermilk

Preheat oven to 350°. Spray a 9x5" baking pan with cooking spray. Set aside.

In a large bowl, cream together butter and sugar. Add eggs and vanilla, beat til fluffy. Set aside.

In a small bowl, mix flour, oatmeal, soda, salt and cinnamon. Add dry ingredients alternately with bananas and buttermilk to butter mixture.

Pour batter into prepared pan. Bake 30-35 minutes; cool in pan 10 minutes then remove to a cooling rack to cool completely.

This recipe makes a nice loaf of bread.
