Hakuna Frittata!
This is one of those "clean out the fridge and pantry" recipes.
butter
1 can sliced potatoes, well drained
1/4 cup roasted red bell pepper, drained
8 eggs
1/4 cup milk or half and half
1/2 cup Monterey Jack cheese with jalapenos, shredded, plus extra for serving
2 garlic cloves, minced
Mrs Dash original seasoning
salt and pepper
2 tomatoes, seeded and chopped
fresh cilantro, snipped
Add butter to a large cast iron skillet or other ovenproof pan on medium high heat. When butter is hot and sizzling, add potatoes. Fry til crisp.
Meanwhile in a large bowl, whisk together eggs, milk, cheese, garlic, Mrs Dash and salt and pepper; stir in tomatoes and cilantro.
Preheat oven to 350°.
Pour egg mixture into skillet and cook til eggs are set on the bottom and sides.
Place in the oven and bake til eggs are set on top, 10-15 minutes.
Remove from oven and let sit for a few minutes before slicing into wedges.
Served with additional cheese and buttered toast.
