Food Network's Chicken and Broccoli Stir Fry

My original plan was to make General Tso's with steamed broccoli on the side, but I make that all the time. I decided to try something a bit different and I found this in a google search on "Chinese Chicken Recipes".

I ended up adding a lot more soy sauce than the original recipe called for.

1 lb boneless skinless chicken breast, chopped into pieces
2 cloves garlic, minced and divided
1" piece fresh ginger, peeled, minced and divided
2 T sugar
1 T soy sauce
1 T plus 1 t cornstarch, divided
1 1/4 t salt, divided
1 T sherry
1 T sesame oil
oil for stir frying broccoli (I used peanut oil)
fresh broccoli, stalks diced and cut into florets
hot pepper flakes to taste
toasted sesame seeds
cooked white rice

In a medium bowl, mix chicken with 1 clove garlic, 1/2 ginger, soy sauce, sugar, 1 teaspoon of the cornstarch, 1 teaspoon of the salt, sherry and sesame oil. Set aside to marinate at room temperature for 15 minutes.

In a small bowl mix the remaining cornstarch with 1/3 cup water. Set aside.

Heat a wok or large frying pan over medium high heat. Add a little peanut oil. Stir fry broccoli stems about 30 seconds. Add florets, remaining garlic and ginger, 2 tablespoons of water (or even chicken broth) and 1/4 teaspoon of the salt. Stir fry a couple minutes. Remove to a platter or plate.

Add a little more oil. Add the chicken and pepper flakes. Stir fry til chicken is golden brown. Stir in broccoli and cook til heated through.

Stir in the reserved cornstarch mixture and bring to a boil to thicken. Add more water (or even chicken broth) if needed to thin the sauce.

Taste and adjust as desired with sugar, soy sauce, etc.

Serve stir fry over rice and garnished with sesame seed
