I came up with this salad to go with tonight's dinner of Lebanese shisk taouk style rubbed and grilled chicken breast. I created it to use up a lot of veggies that needed it. The only thing missing here was some feta cheese.
Feel free to prepare to your taste.
1/4 cup olive oil
1 fresh lemon, juiced
1 clove garlic, minced
1 t dried mint, rubbed
fresh cilantro, to taste
sea salt and freshly ground Tellicherry pepper, to taste
1 cup dried chickpeas, cooked and well drained
1 English cucumber, sliced
handful baby carrots, diced finely
minced red onion to taste
In a large bowl, whisk together oil, lemon juice, garlic, mint and salt and pepper. Taste and adjust as desired.
Fold in remaining ingredients. Cover tightly and refrigerate at least an hour before serving.
