Mom's Chewy Chocolate Cookie Bar with Peanut Butter Chips Recipe

Mom used to whip up this recipe (as cookies) for us all the time when we were kids. I don't make a whole lot of cookies anymore; bars are so much easier.
2 1/2 sticks (1 1/4 cups) butter, softened
1 1/2 cups sugar
2 eggs
2 t vanilla extract
2 cups flour
3/4 cup cocoa
1 t baking soda
1/2 t salt
10 oz pkg (1 2/3 cups) peanut butter chips
Preheat oven to 350°. Spray a 15x1" baking pan with cooking spray. Set aside.

In a large bowl, beat butter and sugar together til light and fluffy. (I used a stand mixer for all of the steps. It made it a lot easier).

Mix in eggs and vanilla; beat well.

In a large bowl, sift together flour, cocoa, baking soda and salt; gradually blend into butter mixture.

Stir in peanut butter chips. (Batter will be stiff.) Pat batter in prepared pan. (I used moistened hands for this step).

Bake 20 minutes. Cool completely in pan on a wire rack; cut into bars.
