Southwest Rubbed Pork Roast

This was an easy meal to set up tonight- the pork roast rub was applied yesterday and the meat marinated overnight. Southwest Rub 2 T chili powder 2 T paprika 1 T coriander 1 T oregano 1 T salt or to taste 1 T garlic powder 2 t ground cumin 1 t black pepper 1 t cayenne pepper 1 t red pepper flakes I roasted the pork for about 1 1/2 hours at 350° til it was really tender. I let it sit for about 10 minutes then sliced for serving.

Fish Tacos with Black Bean Southwestern Slaw

When I first heard of "fish tacos" I thought " What a way to ruin a good taco ." But then I found this recipe while searching for healthy dishes, and thought it sounded fabulous. I was right. The ingredient list seems extensive, but these are actually quite easy to prepare and assemble. For the best flavor, use only fresh and high quality ingredients where you can.
