Potato Bacon Chowder

I've adapted this recipe from a cookbook received by DD. It was so easy and so good!

2 T butter
4-6 potatoes, peeled and diced
1/2 onion, chopped
1 stalk celery, chopped
6 slices lean bacon, chopped
1 clove garlic, minced
2 cups heavy cream
1 cup dry white wine
pinch thyme
1 bay leaf
salt and pepper to taste

In a soup pot or Dutch oven over medium heat, melt butter. Add potato, onion, celery and bacon and saute about 5 minutes. Stir in garlic and saute another minute or so.

Add cream, wine, thyme, bay and salt and pepper and cook til potatoes are tender, about 15-20 minutes.

I served the chowder with toasted parmesan cornbread.http://media-files.gather.com/images/d424/d986/d745/d224/d96/f3/full.jpg

  1. I'm feeling a bit under the weather. I'd love a good bowl of soup (instead I get banquet food tonight, and have to wear heels).
