Central American Style Tacos

         This recipe came in my Allrecipes newsletter and sounded so good, I saved it. The original can be found here:

This is my adaptation:

1 lb lean ground beef
1/2 onion, chopped
2 cloves garlic, minced
1 t Mexican oregano, rubbed
1/2 t Adobo seasoning (I used homemade)
salt and pepper to taste
3 potatoes, peeled and cubed
4-6 tomatillos, husked and quartered
1/2 jalapeno, diced
1/2 cup fresh cilantro, chopped (or to taste)
warm flour tortillas
shredded Mexican blend cheese

Cook beef and onion in a large frying pan or skillet over medium high heat. Drain if necesary. Stir in garlic, seasonings and salt and pepper and cook another minute or so.

Stir in tomatillos, jalapeno and cilantro. Cook til tomatillos are tender, about 10 minutes. Note: If mixture appears dry, stir in a little chicken broth.

Meanwhile, boil potatoes in a large saucepan about 10 minutes. Drain. Gently stir potatoes into the beef mixture. Cook another 5 minutes or so.

Heat tortillas on a comal or in a frying pan til warm and flexible. Spoon on some of the meat mixture.

I served the tacos with Mexican cheese and rice and homemade habanero salsa for me.
