Easy Apple Cake with Sour Cream Frosting
Oh my, this was delicious. I have a sneaking suspicion it will taste even better tomorrow, rather like a fruit cocktail cake.
4 large apples, peeled and diced (I used Macintosh)
1 1/2 cups sugar
1/2 cup vegetable oil
2 eggs, beaten
2 t vanilla
2 cups flour
2 t baking soda
2 t cinnamon
1/2 t salt
1 cup chopped walnuts (pecans would be great too)
Preeat oven to 350°. Spray a 13x9" pan with cooking spray. Set aside.
In a large bowl, mix apples and sugar. Stir in oil, eggs and vanilla.
In a separate large bowl, mix dry ingredients together. Stir in nuts and add to apple mixture.
Bake 45-50 minutes. Cool completely before frosting.
Sour Cream Frosting
1/3 cup sour cream
1/4 cup butter, softened
2 1/2 cups powdered sugar
1 t vanilla
1/2 t fresh lemon juice
pinch salt
In a large bowl, cream together sour cream and butter on low speed with a handheld mixer. Increase to high speed and beat in remaining ingredients. Beat for 1 minute or til frosting is smooth and fluffy. Spread over cooled cake.
