African Style Ground Beef Curry
This is another delicious recipe from my recipe box. My original calls for cooking the curry a couple of hours, but I made it into a nice minute meal. The only thing I wished I would have had was basmati rice to serve it over, rather than plain white.
1 lb lean ground beef
1 onion, minced
3 garlic cloves, minced
1-2 serrano chiles, minced (for less heat, seed)
1" fresh ginger root, finely chopped
1 t ground curry powder
1/2 t ground cinnamon
salt to taste
1/2 cup beef broth
3 medium tomatoes, cored and chopped
1/2 cup light coconut milk
hot cooked rice
In a large frying pan or skillet medium high heat, cook beef and onion til beef is browned. Drain if necessary. Stir in garlic, chiles, ginger, curry powder, cinnamon and salt, cooking for just a few seconds.
Stir in broth and tomatoes and bring to a boil. Reduce heat to medium low; cover and simmer for about 15 minutes. Stir in coconut milk and simmer another 10 minutes or til mixture thickens.
Taste and adjust as desired.
I served the curry over white rice.
