Baked Spaghetti with Chicken

Most of you know I am not fond of jarred spaghetti sauce, but I had a coupon today for a local store brand's organic pasta sauce so I picked up a jar. It had onion, green pepper and mushroom and was quite good for jarred. I just needed to add some salt and pepper and it was good to go.

olive oil
2 chicken breast halves, cut into strips (or diced)
salt and pepper
1 jar (14 oz) spaghetti/pasta sauce
12 oz spaghetti
1/2 cup Mozzarella cheese
1/4 cup Parmesan cheese

Heat a frying pan drizzled with a little oil over medium high heat. Sprinkle chicken with salt and pepper. Saute chicken til lightly golden. Add sauce and bring to a simmer. Remove from heat.
Meanwhile, cook spaghetti according to package. Drain well and return to dry cooking pot.
Preheat oven to 350ยบ. Spray a 1 1/2-2 quart baking dish with cooking spray.
To spaghetti, add chicken and sauce; toss til well blended. Stir in Mozzarella cheese. Press mixture into prepared baking dish. Top with Parmesan.

Bake about 20 minutes, or til bubbling. Let stand 5 minutes before serving.
I served the spaghetti with garlic toast.http://media-files.gather.com/images/d978/d327/d745/d224/d96/f3/full.jpg
