Pasta with Spicy Chicken and Pesto and 3 Pepper Cheese Bread

For best results, time the pasta to complete cooking as the chicken cooks. Return the hot pasta to the cooking pot, and toss in the remaining ingredients.

Measurements are approximate.

olive oil
4 small chicken breast halves, diced
1/2 t hot pepper flakes
1/3 cup homemade or prepared basil pesto
1/3 cup freshly grated Parmesan cheese
2 cups Cavatappi pasta, plus reserved cooking water as needed
salt and pepper to taste

Heat a little olive oil in a large frying pan skillet over medium high heat. Add chicken and saute til nice and brown and cooked through. Stir in hot pepper flakes. Remove from heat.

Toss the chicken mixture with the hot cooked pasta, reserved pasta water (if needed), pesto, cheese, and salt and pepper. Serve immediately.

I served this wonderful pasta with a thick slice of buttered 3 Pepper Cheese Bread. The recipe for the bread can be found here: http://www.gather.com/viewArticle.jsp?memberId=65560&articleId=281474977489279&nav=MyGather.http://media-files.gather.com/images/d418/d263/d745/d224/d96/f3/full.jpg
