Slow Cooker Lentil and Ham Soup

I had two doctors' appointments, labs, etc. today, so I did not want to spend time planning and cooking anything too elaborate for dinner. The slow cooker always comes to the rescue in these situations!

This is a very simple soup. Should you want something more "zippy", add some fresh garlic or herbs. Add more or less broth to your taste.

2 cups lentils
2 cups diced smoked ham
1 chopped onion
2 stalks celery, chopped
generous handful baby carrots, chopped
1 bay leaf
freshly ground black pepper, to taste
beef or chicken broth to cover (or your favorite)
Combine all ingredients in the slow cooker, just covering with broth. http://media-files.gather.com/images/d712/d403/d745/d224/d96/f3/full.jpg
Cook on high one hour and low, 3-4 hours.

Remove bay leaf. Taste and adjust seasonings as desired.

I served the soup with grilled peasant bread with butter and garlic.http://media-files.gather.com/images/d709/d403/d745/d224/d96/f3/full.jpg
