Slow Cooker Lentil and Ham Soup
I had two doctors' appointments, labs, etc. today, so I did not want to spend time planning and cooking anything too elaborate for dinner. The slow cooker always comes to the rescue in these situations!
This is a very simple soup. Should you want something more "zippy", add some fresh garlic or herbs. Add more or less broth to your taste.
2 cups lentils
2 cups diced smoked ham
1 chopped onion
2 stalks celery, chopped
generous handful baby carrots, chopped
1 bay leaf
freshly ground black pepper, to taste
beef or chicken broth to cover (or your favorite)
Combine all ingredients in the slow cooker, just covering with broth.
Cook on high one hour and low, 3-4 hours.
Remove bay leaf. Taste and adjust seasonings as desired.
I served the soup with grilled peasant bread with butter and garlic.
