Pecan Butterscotch Bars
The other day I found a recipe for pecan bars, so I bought a big bag of pecans to make them. The problem was I never jotted down or even bookmarked where I found it. This isn't the recipe I wanted to use, but after searching the 'net for several hours, I finally just made up my own version.
To say this is an incredible dessert is putting it mildly.
1 box yellow cake mix, divided
1/2 cup melted butter
1 egg
homemade Butterscotch (recipe follows)
1/2 cup firmly packed brown sugar
1 t vanilla
3 eggs
1 1/2 cups chopped pecans
Butterscotch
1/2 cup firmly packed brown sugar
2 T heavy cream
2 T butter
Preheat oven to 350°. Butter or generously spray a 13 x 9" baking pan.
Remove 3/4 cup of dry cake mix; set aside. In a medium bowl, combine remaining cake mix with butter and 1 egg; mixing til cake mix is incorporated. Press mixture in bottom of prepared pan.
Bake for 15 minutes or just til golden brown. Remove and cool slightly.
Meanwhile, add butterscotch ingredients to a small saucepan over medium heat. When sugar melts, bring mixture to a boil and cook 1 minute, stirring constantly. Remove from heat and cool slightly.
Combine reserved cake mix with brown sugar, vanilla, 3 eggs and cooled butterscotch, mixing well. Pour mixture over crust; sprinkle with pecans.
Reduce oven temperature to 325° and bake for 35 minutes.
Remove to a rack and cool before cutting into squares.
Amazing, just amazing.
