Chicken Parmesan Stromboli
I found this recipe in a flyer that one of our local grocery stores was handing out over the Thanksgiving holiday.
Measurements are approximate.
1/2 lb boneless skinless chicken breast
olive oil
salt and pepper to taste
1 recipe pizza dough (or use your favorite prepared style)
1 cup pizza sauce
1 cup shredded Mozzarella cheese
1/2 cup Parmesan cheese
2 T melted butter mixed with 1/2 t garlic powder for crust
In a large frying pan or skillet, saute chicken breast in oil til nice and brown and cooked through.
Remove from pan and cool slightly. Shred or chop finely. Sprinkle with salt and pepper. Set aside.
Roll dough into a large circle on a pizza pan, or as I did, roll it to place on a hot pizza stone.
Preheat oven to 450°.
Spread sauce on half of dough; top with chicken and cheeses.
Fold in half and pinch to seal. Cut several slits in the top. Brush top with butter mixture.
Bake 12-15 minutes or til crust is golden brown and cheese is melted.
This was actually VERY yummy!
