Spaghetti with Alfredo Sauce

I am not that fond of Olive Garden, finding that all of their red sauces pretty much taste the same. The only thing I ever ordered when I did eat there, was the fettucine Alfredo, bread sticks and salad. This is my interpretation of that meal (starring EXTRA CHEESE), brought about by my "Recipe of the Day" post from the other day.

This meal features several different kinds of cheese!
1/4 cup butter
1 garlic clove, minced
1/2 cup heavy cream
pinch each: white pepper and nutmeg
1/4 cup freshly grated parmesan blend cheese (parm, asiago, romano)
1/2 cup shredded mozzarella cheese
8 oz spaghetti, cooked according to package

Melt butter in a medium saucepan over medium heat. Stir in garlic and infuse for a few seconds. Stir in cream, white pepper and nutmeg. Bring mixture to a simmer; reduce heat to medium low and cook, stirring frequently, til sauce thickens.

Stir in Parmesan cheese blend and simmer sauce for about 5 minutes or til cheese melts and sauce is smooth.

Remove from heat and stir in mozzarella, 1/4 cup at a time, stirring til smooth.

I served the spaghetti with sauce, fresh cheesy breadsticks and a small salad with homemade parmesan ranch dressing.
