Creamy Broccoli Soup with Kevin's Beer Bread

What a yummy dinnner! Soup and bread go together so well!

3 cups chicken broth
1 small head fresh broccoli, broken into small pieces
1 clove garlic, minced (optional)
4 T butter
1 T flour
1-2 cups half and half or milk (depending on how thick you like your soup)
chopped fresh parsley (or any herbs you like)
pepper to taste
1 cup shredded sharp cheddar cheese

In a large saucepan or soup pot, bring broth to a boil. Add broccoli and garlic. Cook 5 minutes.

Meanwhile, melt butter in a small saucepan over medium heat. Whisk in flour and cook about 1 minute. Whisk in milk. Cook just til thickened, about 2 minutes.

Whisk milk mixture into broccoli mixture. Add parlsey and pepper to taste.

Cook, stirring constantly, til soup is thickened.

Remove from heat and add cheese a little at a time, stirring til melted. Serve with additional cheese if desired.

I served this easy soup with a nice thick slice of bread with butter.
