Chipotle Chicken

My actual intent was to post this recipe to my Recipe a Day series, however, I still have some of my homemade chipotles in adobo left and this was a perfect way to use it up!

1 cup pureed chipotles in adobo, divided
2 T sour cream
juice from 1 fresh lime
salt to taste
1 lb boneless, skinless chicken breasts halves
1/2 cup sour cream
1 cup shredded Mexican blend cheese

In a small bowl, combine 2 T chipotle sauce, 2 T sour cream, lime juice and salt. Taste and adjust as desired. Brush mixture over chicken. Cover and refrigerate 2-4 hours.

Preheat oven to 400°.

Place chicken in a 9x13" baking dish and bake about 10 minutes per side (depending on thickness of chicken).

Preheat broiler.

Mix 1 cup sour cream and remaining chipotle sauce. Taste and adjust as desired. Pour sauce over chicken breasts and sprinkle evenly with cheese. Broil til hot and bubbling.
