Potato and Bacon Hash
I had to get creative this morning, as I ran out of eggs yesterday. I had plenty of bacon, potatoes and cheese on hand, so this is what I whipped up.
peppered bacon, cut into small pieces
4 potatoes, peeled and diced
1/2 small onion, minced
season salt to taste (I used homemade)
your favorite cheese (I had provolone and Matt had Swiss)
In large frying pan over medium high heat, cook the bacon just til crisp.
Remove from pan with a slotted spoon, leaving about 2 T bacon grease in pan. Drain bacon on paper towels.
Add the potatoes to the same pan, sprinkling with season salt, and fry til the potatoes are golden brown and almost tender, about 10 minutes.
Stir in onion and cook another 5 minutes or so.
Stir in bacon and heat through. Remove from heat and top with cheese.
