Chili with Steak, Chorizo and Bacon

I came across a recipe the other day for chili made with sirloin steak and ground pork, but of course I could not find it when it came time to start dinner. This is what I could remember of it.

Measurements are approximate.

vegetable oil
1/2 lb sirloin steak, trimmed and cubed
1/2 lb chorizo
4 pieces of lean (center cut) bacon, chopped
1 small onion, chopped
1/2 green pepper, chopped
2 cloves garlic, minced
1 28 oz can diced tomatoes
1 bottleor can of good beer (or substitute beef broth)
2 T chili powder (I used homemade)
1 T ground coffee
1 T brown sugar
1/2 T ground cumin, ground coriander
2 t paprika
1 t each: powdered mustard and salt

Drizzle a large frying pan or cast iron skillet with a little oil. Over medium high heat, brown meats well. Drain on paper towel. Add meats to slow cooker.

To same pan, add onion, green pepper and garlic and cook for about 5 minutes. Transfer with a slotted spoon to slow cooker.

Increase heat of pan to high. Stir in tomato, beer and remaining ingredients. Bring to a boil and cook for a few minutes. Taste and adjust seasonings as desired. Pour mixture into slow cooker; cover and cook on high 1 hour. Reduce heat to low and and cook another 4-5 hours.

I served the chili with a dollop of sour cream alongside homemade buttermilk cornbread.
