Sausage and Chickpea Soup
Not in a the mood for a time consuming dinner, I came up with this simple soup, ready in about 30 minutes.
I served the soup with homemade cheesy garlic bread which was simply a homemade sub bun that I had previously frozen, sliced in half and topped with 1 stick of butter, plenty of garlic powder and sprinkled with mild cheddar cheese.
olive oil
1 link smoked sausage, sliced
1 (15 oz) can chickpeas
1 onion, chopped
1 clove garlic, minced
1/2 t thyme, rubbed
4 cups chicken broth
1 (15 oz) can diced tomatoes
1 bay leaf
pepper to taste
Drizzle a little oil in a Dutch oven over medium high heat.
Add sausage and fry til just golden. Add onions and cook til softened, about 5 minutes. Stir in garlic and cook another minute or so. Stir in thyme.
Increase heat to high and stir in remaining ingredients. Once soup reaches a boil, reduce heat to medium low and simmer about 20 minutes. Remove bay leaf and serve.
So simple, yet so delicious!
