Kicked Up Chipotle Meatloaf
One of the best meatloaves I've made yet!
Matt liked the sauce so much, he asked me to add an additional scoop of it for his lunch tomorrow.
12 oz bacon, chopped and divided
1 lb lean ground beef
1 small onion, minced
2 cloves garlic, minced
1 egg, lightly beaten
1/2 cup shredded Mexican blend cheese, divided
1/2 cup saltine cracker crumbs
salt and pepper to taste
1/3 cup chipotles in adobo sauce (use your favorite)
Line a loaf pan with several pieces of bacon, just to cover bottom. Set aside.
Cook bacon in a large frying pan or skillet and medium high heat til nice and browned. Drain on paper towel.
Preheat oven to 350°.
In a large bowl, mix beef, onion, garlic, egg and half of cheese. Stir in crumbs, cooked bacon and salt and pepper; mix til blended. Shape into a loaf, and carefully move to prepared pan. Pour chipotle sauce over the top and spread with a rubber spatula.
Bake 1 hour. Carefully drain accumulated fat; sprinkle top with remaining cheese. Return to oven and bake til cheese is melted, about 5 minutes. Let rest a few minutes before slicing.
I served the meatloaf with buttermilk mashed potatoes.
