Zesty Guacamole Jack Burgers

Matt sent me this recipe from work last week and asked that we have it for dinner tonight. Sometimes he finds the best recipes!

Zesty Guacamole
2 ripe avocados, peeled and pitted
2 T chopped cilantro leaves
1 t minced onion
1/2 jalapeno pepper, seeded and minced
1/2 garlic clove, minced
1/2 t chili powder
fresh lime juice to taste
salt to taste

Burgers
1/2 lb lean ground beef
1/2 lb ground pork
2 T minced onion
1 T chili powder
1 garlic clove, minced
thickly sliced Monterey Jack cheese
fresh lime juice to serve (optional)

In a small bowl, mash avocado with remaining ingredients. Taste and adjust as desired. Cover tightly and refrigerate.

In a large bowl, mix together beef, pork, lime, garlic, and onion. Cover tightly and refrigerate 1 hour. Divide mixture and form into patties.

Preheat broiler.

Broil burgers til desired doneness is reached. During the last minute or so add cheese slices atop each burger, broiling til melted.

I served the burgers with a dollop of guacamole and a drizzle of lime juice alongside homemade chips and salsa.
