Mexican Style Stew
I posted a recipe from Whole Foods the other day and it sounded so good, I knew I needed to make it. Of course, I made a few modifications.

This is my version:
1 lb lean ground beef
1 onion, chopped
2 garlic cloves, minced
1/4 cup taco seasoning (I used homemade)
2 cups chicken broth
2 cups cooked black beans
1 small (15 oz) can diced tomatoes
1 cup frozen corn
1 cup salsa (I used homemade)
Mexican blend cheese, sour cream, homemade tortilla strips for garnish
Cook beef, onion and garlic in a Dutch oven over medium high heat. Drain well.
Add meat mixture back to pan and add remaining ingredients (except garnish) and simmer, covered, for 20 minutes, stirring occasionally.
I served our stew with cheese, sour cream and tortilla strips.
