Matt's Ground Beef and Cauliflower Casserole
Yes, Matt created this recipe. He told me he was hungry for three things: ground beef, cauliflower and Velveeta. This is my end result. It was awesome!
1 lb lean ground beef
1 t homemade season salt (or your favorite spices/herbs)
1/2 head fresh cauliflower broken into florets
4 oz Velveeta cheese, cubed
about 2 T half and half
In a large frying pan or Dutch oven, brown beef. Drain if necessary; return drained beef to pan. Remove from heat and stir in seasoning.
Meanwhile, steam cauliflower about 2 minutes. Mix with beef and seasonings.
Preheat oven to 350°. Spray an 8x8" baking dish with cooking spray.
In a small saucepan, melt cheese with half and half. Add to beef mixture.
Pour into prepared pan; bake 20 minutes or til hot and bubbling. Let rest a few minutes before serving.
Variations: This would be great made with canned tomatoes. Stir in onion and/or garlic into the beef. Use cheddar or your favorite cheese. Mix with pasta.
