Pork Rules
Pork and bacon and ham oh my!
I had originally planned to broil the pork loin slices with a rub, but I needed to use up the ham and bacon so I came up with this. Simple but filled with flavor!
olive oil
1 1/2 lb pork loin, sliced
Adobo seasoning to taste (I used homemade)
salt and pepper to taste
1 cup chopped smoky ham
1 small onion, chopped
several slices bacon, chopped and fried crisp
1 1/2 t Spanish paprika
1 cup chicken broth or stock (I used low sodium)
1/2 cup Sherry or dry white wine
3-4 potatoes, peeled and diced
Heat a little oil in a large cast iron skillet or Dutch oven over medium high heat. Add pork and sprinkle generously with Adobo and salt and pepper. Cook pork til golden brown on both sides.
Add ham, onion and bacon and cook about 10 minutes. Stir in paprika.
Increase heat to high and stir in broth and sherry and bring to a boil.
Cover and reduce heat to low; cooking for several hours, stirring occasionally. During the last 30 minutes or so, stir in potatoes.
Serve stew with freshly ground black pepper if desired.
