Cornmeal Crusted Pollock
Easy, inexpensive and healthy!
1 lb pollock fillets, cut into smaller strips
1/4 cup buttermilk
1 T hot sauce
cornmeal for dredging
vegetable oil for frying
Old Bay to taste
Mix buttermilk and hot sauce. Marinate fish about 20 minutes. Dredge in cornmeal, pressing to coat. Let rest in fridge for about 15 minutes.
Meanwhile preheat oven to 400°.
Bake fish til flaky inside and golden brown outside, about 15 minutes.
I served the fish with mac n cheese.
