Tuscan Sausage and Beans

This recipe is from my personal collection, I have no idea where it originated.

olive oil
1 lb sweet Italian sausage, sliced
2 cloves garlic, minced
1 1/2 cups cooked white beans (I used Great Northern)
1 small (14.5 oz) can diced tomatoes
1/4 t dried fennel, crushed
salt and pepper, to taste
couple generous handfuls spinach
Italian blend cheese

In a large deep frying pan or Dutch oven over medium high heat, drizzled a little oil. Cook sausage til browned. Remove and set aside.

Add garlic to pan and cook about 30 seconds. Stir in beans, tomatoes and fennel and salt and pepper to taste.

Cover and reduce heat to medium low. At this point you can cook the mixture anywhere from 20 minutes to 2 hours.

Stir in spinach and cook 5 minutes. Remove from heat and stir in cheese.http://media-files.gather.com/images/d146/d908/d745/d224/d96/f3/full.jpg
