Spaghetti with Meat and Veggie Sauce
This is another of those meals that is great for using up veggies and herbs from the garden.
1 lb lean ground beef
olive oil
1 chopped onion
2 garlic cloves, chopped
2-3 tomatoes, rough chopped
1 cup beef broth
1 small yellow squash, chopped
1 handful fresh green beans, chopped
1 small handful fresh basil leaves, chopped
salt and freshly ground black pepper to taste
hot cooked spaghetti
In a large frying pan or cast iron skillet over medium high heat, add a little olive oil. Brown beef. Stir in onion and cook for a few minutes. Stir in garlic and cook another minute or so.
Stir in remaining ingredients, reduce heat to low and simmer all day, stirring occasionally.
