Peanut Butter 'n Jelly Cookies

I remember making these cookies many years ago in high school home ec. (don’t ask how many years it was, either).

I used natural peanut butter and strawberry spreadable fruit to make them a little healthier, along with cutting down the amount of sugar that was called for. However, this recipe is the original.fileId:3096224744272407;size:inter;








1/2 c butter, softened
3/4 c peanut butter
1/2 c sugar
3/4 c brown Sugar; Firmly Packed
1 lg Egg
1 t vanilla extract
1 1/2 c flour
1/2 t baking soda
1/2 t baking powder
1/4 t Salt

Your favorite variety of jam or jelly

Mix the butter, peanut butter, sugar, brown sugar, egg and vanilla together, blending well. Blend in the flour, baking soda, baking powder, and salt, stirring til well mixed. Cover and chill for 1 hour.fileId:3096224744272410;size:inter;








Preheat the oven to 375°F. Spray two cookie sheets with cooking spray.




Shape the dough into uniform size balls and place 2 inches apart on prepared pans. With your thumb press deeply into the center of each ball. fileId:3096224744272413;size:inter;







Bake for 10 to 12 minutes or til just set. Cool on the pan for about a minute; remove to rack to cool completely. Spoon a small dollop of jam into each thumbprint.

Serve with a tall glass of milk.

  1. I came by to read and click a little. I'm finally figuring out that a little click goes a long way. I would love these cookies, and one of these days I will make them. My hubby doesn't like pb cookies, and I would just eat them all. The grandkids just need to get a little older:)
