Caramel Corn
I thought caramel corn would be a perfect snack for my friends' kids that were visiting this weekend. Little did I realize how much the adults would love it too!
The recipe is from a friend's mom from when I was a kid, passed on to my mom.
2 cups packed light brown sugar
1/2 cup light corn syrup
1/2 cup butter
5-6 quarts popcorn (popped)
1/2-1 cup roasted peanuts
1/2 teaspoon salt
1 teaspoon baking soda
1 t vanilla
1/2 t salt
In a medium sized saucepan, combine sugar, syrup and butter. Bring to a boil over medium low heat, stirring occasionally to dissolve the sugar, about 5 minutes.
Meanwhile, preheat oven to 250°. On a large baking sheet, spread out popcorn and sprinkle with nuts. Set aside.
Remove caramel from heat and stir in soda, vanilla and salt; mix well. Immediately pour caramel over the popcorn mixture, stirring til the kernels are evenly coated.
Bake for 40 minutes, stirring every 10 minutes.
Remove from oven and cool in a separate pan or on wax paper.
Needless to say, the entire batch disappeared.
