Grilled Chicken Tacos with Black Beans and Sharp Cheddar

These were probably the tastiest (and easiest) chicken tacos ever!

1 lb boneless skinless chicken breast
Adobo seasoning, to taste
corn tortillas, fried til softened
1 can black beans, rinsed and well drained
grated sharp cheddar cheese
salsa (I used habanero)

Sprinkle chicken breast liberally with seasoning. Cover and marinate overnight, or at least 2 hours.http://media-files.gather.com/images/d299/d817/d745/d224/d96/f3/full.jpg
Preheat grill over medium heat. Grill chicken til cooked through. Let rest 5 minutes before slicing thinly.

Load grilled chicken in tortilla and top with beans, cheese and salsa. I served them with a side of Mexican rice.
