Pasta Fazool

According to my Bon Appetit cookbook, this recipe is a take on the soup pasta e fagioli. Wherever it originated, it was delish!

1 link sweet Italian sausage
3/4 lb lean ground beef
1 onion, chopped
4 garlic cloves, chopped
1 t dried oregano, rubbed
1/2 t dried thyme, rubbed
1 small (14.5 oz) can diced tomatoes
1/4 t hot pepper flakes
1 1/2 cups cooked kidney beans
2 cups dry rigatoni pasta
1/2 cup freshly grated Parmesan
1/4 cup chopped fresh Italian parsley
1/2 cups shredded Mozzarella

Preheat oven to 400°F. Spray a 13X9" baking dish with cooking spray. Set aside.

In a large frying pan over medium high heat, cook first 6 ingredients til sausage and beef are brown. Stir in tomatoes, tomato paste and pepper flakes and simmer about 5 minutes. Add kidney beans and heat through. Taste and adjust as desired.

Meanwhile, cook pasta til just al dente. Drain and return to hot cook pot.

Toss sauce with pasta in cookpot. Stir in Parmesan and parsley. Transfer to prepared baking dish.

Sprinkle with Mozzarella. Bake til hot and bubbly, about 25 minutes. Let rest about 5 minutes before serving.
