Shepard's Pie with Basil Mashed Potatoes
Well, most of you know I generally don't eat lamb, but Matt really likes it. Sometimes he gets to choose what we have for dinner.
This version is my own, using what I had on hand: fresh green beans, basil and parsley from the garden, and potatoes and tomatoes that needed using up.
Start the potatoes when you start browning the lamb.
Pie
1 1/2 lbs ground lamb
1 onion, chopped
3 garlic cloves, chopped
1 cup water
1 cup canned diced tomatoes
2 beef bouillon cubes
1 cup fresh green beans, frozen peas, sliced carrot, sliced celery (whatever you like)
handful chopped fresh
Preheat oven to 400°.
Heat a large frying pan skillet over medium high heat. Add lamb and onion and cook til lamb is no longer pink. Stir in garlic and cook another minute or so.
Increase heat to high and add remaining ingredients. Simmer 10 minutes or so, til veggies are crisp tender.
Transfer lamb mixture to a 13x9" baking pan. Carefully spread mashed potatoes over the top, covering completely. Bake pie til hot and bubbling and top is golden brown, about 20-25 minutes.
Let rest 10 minutes before slicing.
Basil Mashed Potatoes
6 potatoes, peeled and quartered
2 cloves garlic, sliced
2 t salt, divided
1/4 cup cream, at room temperature
small handful fresh basil leaves, chopped
1/2 t freshly ground black pepper
Place potatoes, garlic and 1 t salt in a Dutch oven or pot, cover with water; bring to boil over high heat.
Cook til potatoes are very tender, about 15-20 minutes. Drain well and return to hot cook pot. Mash potatoes and garlic with cream til smooth consistency is reached and most lumps are gone. Stir in remaining salt, basil and pepper. Taste and adjust as desired.
