Grilled Veggie Pasta

Fresh as fresh can be! This one had everything from the garden except the oil and nuts.

1/2 lb pasta (I used cavatappi)
1 cauliflower, cut or broken into florets
2 tomatoes, halved
1 small onion, quartered
olive oil
sea salt and freshly ground black pepper to taste
1/4 cup fresh basil leaves, chopped
1/2 cup almonds, toasted and halved
fresh parsley, for garnish

Cook pasta according to package directions. Reserve 1/4 cup pasta water. Drain pasta, set aside.

Preheat grill over medium high heat. Drizzle olive oil over cauliflower, tomatoes and onion. Sprinkle generously with sea salt and freshly ground black pepper. Note: I used my cast iron skillet to grill the cauliflower and onion, and the tomato was grilled over open flame til charred lightly.http://media-files.gather.com/images/d1/d866/d745/d224/d96/f3/full.jpghttp://media-files.gather.com/images/d0/d866/d745/d224/d96/f3/full.jpg
Place cooked pasta in a large bowl; toss with cauliflower, tomato, basil and pasta water.http://media-files.gather.com/images/d999/d865/d745/d224/d96/f3/full.jpg
I served this garnished with almonds and parsley along with a nice slab of buttered peasant bread.http://media-files.gather.com/images/d2/d866/d745/d224/d96/f3/full.jpg
