Hoppin' John Soup

I had potatoes to use up, so added them rather than white rice.

6 slices bacon, diced and cooked, grease reserved
1 large onion cubed
4 cups chicken broth
1 cup dried black eyed peas
1 small (14.5 oz) can tomatoes
1 jalapeno chile pepper, seeded and minced
2 t Cajun seasoning
3/4 t ground cumin
1 bay leaf
salt and pepper to taste
Worcestershire sauce to taste
hot sauce to taste
3 potatoes, cubed

In a large saucepan or Dutch oven over medium heat, saute the onions til softened in the bacon drippings, about 10 minutes. Increase heat to high and add broth, beans, tomatoes, chile and seasonings.

Bring to a simmer; cover and reduce heat to medium low. Cook soup til peas are tender, about 1 1/2-2 hours.

Stir in potatoes and simmer til potatoes are tender, about 15-20 minutes.

Serve with additional hot sauce if desired.
