Soup and Sammiches: Roast Beef with Potato Corn Chowder

I had to get really creative with the soup, as I didn't have cream or bacon on hand, ingredients I would normally add to this type of soup.

baguette, bread, sub buns, whatever you like (I used homemade rustic bread)
1/4 cup horseradish mayo
sliced cheese (I used colby)
fresh lettuce
thinly sliced onion
1/2 lb thinly sliced cooked deli roast beef

Spread each side of bread with horseradish mayo. Top with remaining ingredients.

Chowder
butter, bacon grease, oil whatever you like
1/2 onion, chopped
2 potatoes, lightly peeled and diced
4 cups chicken broth
1 cup frozen corn
salt and freshly ground black pepper to taste
fresh chives
Velveeta (optional), diced

Melt butter in a large pot over medium heat. Add onion and saute til softened, about 5 minutes. Stir in potato and corn and saute a few minutes.

Add broth and bring just to a simmer. Cover and cook soup about 15 minutes or til potatoes are tender.
With a hand masher, mash potatoes til all lumps are gone. Stir in chives and cheese, stirring til cheese is melted. Taste and adjust as desired.http://media-files.gather.com/images/d5/d863/d745/d224/d96/f3/full.jpg
