Plum Blueberry Crisp with Pecans
I posted this fruit crisp recipe the other day, and knew I needed to make it to use up several plums I had.
I thought I had Bisquick to use, but I didn't. I just substituted regular flour.
6 red and/or purple plums, sliced (about 5 cups)
1/2 cup bluberries
3/4 cup sugar, divided
3 T cornstarch
1/2 Old Fashioned oats
1/2 cup chopped pecans (or walnuts)
1/2 cup flour
1/4 cup butter, softened
Heat oven to 350°. Spray a glass baking dish with cooking spray. Set aside.
In a large bowl, stir plums, blueberries, 1/2 cup of the sugar and the cornstarch til combined.
Pour into prepared baking dish.
In a medium bowl, mix oats, nuts, flour, butter and remaining 1/4 cup sugar with a fork til crumbly. Dollop over fruit.
Bake 50-55 minutes or til mixture is hot and bubbly and topping is lightly browned.
I served the crisp warm topped with butter pecan ice cream. Awesome!
