Vietnamese Style Beef and Noodles

My sisters and I were discussing this dish the other day and it got me thinking about how to make it with limited stuff on hand. My sister Shelley had some great ideas.

It normally calls for steak, but all I had was ground beef, and rice noodles, but all I had was spaghetti. Guess this is more like fusion cuisine than authentic Vietnamese Pho.

Measurements are approximate.

sesame oil
1 lb lean ground beef
1 small onion, minced
2 cloves garlic, minced
1" fresh ginger, minced
red pepper flakes to taste
4 cups beef broth
2 T fish sauce
1 T teriyaki
1 T soy sauce
1/2 lb spaghetti, broken into small pieces
splash rice vinegar
1/4 cup parsley, roughly chopped
1/4 cup Thai basil leaves, roughly chopped
juice from 1 lime
1 jalapeno, sliced, optional
Sriracha (red chile sauce), optional

In a large soup pot over medium high heat, add a little sesame oil. Brown ground beef; drain well. Stir in onion and cook a few minutes. Stir in garlic, ginger and hot pepper flakes and cook another minute or so.
Increase heat to high and add broth. Reduce heat to medium low and cook for about 10 minutes. Stir in spaghetti and cook til tender.

Stir in parsley, basil and lime juice. Taste and adjust as desired.

I served the pho with a garnish of jalapeno and drizzled with Sriracha sauce. Delicious!http://media-files.gather.com/images/d323/d877/d745/d224/d96/f3/full.jpg
