Rachael Ray's Burgers with Chipotle 'Slaw
This is my take on Ray's burger, found in my Everyday with Rachael Ray magazine.
1 pkg shredded cabbage (or coleslaw mix)
1/2 cup mayo
1/4 cup dried tomatoes, finely chopped
3 T pickled jalapeno chiles, chopped
1 chipotle chile in adobo sauce, finely chopped, plus 1 T sauce
salt and pepper to taste
1 lb ground beef
sliced pepper jack cheese
hamburger buns
chipotle cheese potato chips

In a medium bowl, combine cabbage, mayo, jalapeƱos, tomatoes, chipotle chile and adobo sauce and salt and pepper. Cover and refrigerate at least 1 hour.

Preheat a grill over medium high heat.
Shape beef into 3-4 patties. Grill til desired doneness is reached, topping with cheese during the last few minutes of cooking.
Meanwhile, grill buns til lightly toasted. Top each burger with coleslaw and potato chips and serve.
