Grilled Steak Sammiches
I seasoned the steaks with my homemade Adobo seasoning and a little sazon goya and let them marinate overnight in the mixture.
The only thing missing was some sliced tomato, which I didn't have.
1 1/2 lbs sirloin steak, trimmed
thick cut sliced white bread, grilled
1/2 cup mayo
1 t minced fresh jalapenos (or substitute green pepper)
1 t chipotles in adobo sauce
1 red onion, quartered and thinly sliced
sliced pepper jack cheese
Preheat grill over medium high heat. Grill steaks til desired doneness is reached. Let meat rest at least 5 minutes before slicing. Slice steak across the grain into thin slices. Set aside.
Meanwhile, in a small bowl, mix mayo, adobo sauce and jalapenos. Spread one side of each toast slice with mixture. Load up toast with steak, cheese and onions.

For the bread, I used a basic white bread recipe, the link for which can be found here: http://www.gather.com/viewArticle.action?articleId=281474977443206
